Microwave Hot Fudge Sauce

“Always serve too much hot fudge sauce on hot fudge sundaes.  It makes people overjoyed, and puts them in your debt.”
― Judith Olney

This is the hot fudge sauce I grew up on.  My mom always made it to go with either hot fudge brownie sundaes or hot fudge cake/sundaes.  It is delicious, super easy, and you will never want the kind from a jar again after tasting it.  We always double (or triple) it because one batch is never enough.  Like the quote says, always serve too much!  It refrigerates and reheats well, so IF you have leftovers, just cover the glass measuring cup with plastic wrap and pop it in the fridge.  That way, you only have to reheat it instead of putting it in something microwave safe first.  I apologize for the lack of step-by-step pictures, but there isn't much to photograph with this recipe!  I found the pictures for this recipe today, 2 weeks after originally posting this!

Hot Fudge Sauce

1/2 cup sugar
1 1/4 TB cornstarch
2 TB margarine/butter
2 or 3 TB cocoa
1/2 cup water
dash salt
1 tsp vanilla

1. Mix dry ingredients in 2-cup glass measure.

 2. Stir in water.

3. Microwave on high for 90 seconds.  Stir halfway through cooking time (45 seconds).

4. Blend in margarine.

5. Microwave on high for 60 seconds.  Stir halfway through cooking time (30 seconds).

6. Blend in vanilla.

7. Serve over chocolate cake or brownies and ice cream.

Store leftovers in refrigerator.  Makes 1 cup.

NOTE:  If you double or triple this do not put more than 1 tsp vanilla, and please be aware that you will also need to increase the cooking time.  This will be thick when cooked properly!  Increase the time in 30 second increments and stir after each to check consistency.
